Cake Balls


Oh, these are YUMMY!!! Krista made these cake balls a while ago & they were delicious! I wanted to make them to give away as treats, but after I looked up the recipe online so many comments said these were REALLY HARD to make. So I enlisted the help of Krista & made spice cake, cream cheese icing, & chocolate covered cake balls. They were SO EASY. A little time consuming due to the number of steps, but each step is way easy & I will even get Will to help me next time! These can be made with any flavor combination or as a lollipop!

Ingredients
1 (18.25 ounce) package chocolate cake mix
1 (16 ounce) container prepared chocolate frosting
1 (3 ounce) bar chocolate flavored confectioners coating

Directions

Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.

Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.

Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.

Krista gave me a few tips: Make sure the cake is completely cool. Trim the harder edges from the cake.
Use a mixer, don't just stir the cake & icing. After scooping the balls, roll them in your hands to make them nice spheres. Then put the balls in the freezer for a bit to harden making them easier to handle. Keep the water simmering to reheat the chocolate when dipping. We used candy making chocolates & used way more then the 3 oz the recipe calls for. In fact, we used 1 1/2 bags!
