
This recipe is courtesy of Kristin's and my good friend Erin Cullins, who lives in Salt Lake City. This is a perfect fall treat. It's super easy, super yummy, and even super healthy!
applesauce muffins
topping:
2/3 cup oats
¼ cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter, melted
sprinkle of ground flax seeds
batter:
1 ½ cup flour (1 cup all purpose, ½ cup whole wheat)
1 cup oats
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup unsweetened applesauce
½ cup milk (soymilk or dairy)
½ cup brown sugar
¼ cup canola oil
1 egg
Preheat oven to 400 degrees.
Mix all ingredients for batter and pour into muffin pan.
Mix all ingredients for topping and sprinkle over muffins.
Bake for 18-20 minutes.
