
We went apple picking in Hendersonville, NC so here come the apple recipes!
These waffles are so delicious & smell wonderful while they are cooking. Complete with apple syrup these couldn't be more Fall than those red leaves falling in my front yard!
2 c. all purpose flour
3 T. sugar
1 T. baking powder
1 t. cinnamon
1/2 t. ground cloves
1/4 t. nutmeg
2 eggs
3 T. butter, melted
1 to 2 c. milk
1 c. apples, cored, peeled, and chopped
Combine flour, sugar, baking powder, salt, cinnamon, cloves, and utmeg; stir in eggs, butter & milk. Fold apples into mixture. Pour about 1/4 cup onto greased waffle iron until cooked throug & golden brown. Serve with apple syrup.
Apple Syrup:
2 1/4 c. apple juice or apple cider, divided
1/4 c. brown sugar, packed
1 t. cinnamon
1/2 t. ground cloves
2 T. cornstarch
Place 2 cups apple juice or cider, brown sugar, cinnamon & cloves in a saucepan; set aside. Add cornstarch & remaining apple juice or cider to a container with a tight-fitting lid; shake until well blended. Pour into saucepan; bring to a boil. stirring until thickened. Makes 2 1/2 cups.
Note: Once refrigerated this syrup turns really thick like jelly. We like to spread it on biscuits with a little butter & it tastes like Cracker Barrel's apple butter. Or you can reheat it & it will become syrup again.
